Green with Salsa
It's been a very upbeat day for me. The morning was bright and not too hot for once. It started to rain later in the day, which delights me to no end. I love the rain. It makes me so happy to watch it pour down and imagine the world getting clean again. (Plus, that song by Garbage runs through my head, so I try to match the rhythm of the song to the rain.)
Days like this I don't want to eat a full meal. I just want to sit around snacking all day playing on my phone, reading, tormenting Kenny with my phenomenal wit and sarcasm as he plays Destiny. It's pretty action packed. So when I got home I decided to whip up some more salsa.
I love dips of any kind. I can eat meals consisting only of dips and the edible automobiles that come with them. I'll eat hummus, baba ganoush, salsa, spinach, french onion, muhammara, chutnies. The list goes on. And I don't care what I have to dip in them. I once ate an entire loaf of bread with only hummus as a dinner for three nights running. That being said, this tomatillo salsa is by far my favorite.
This literally takes 10 minutes to make (maybe 15 if you're having a hard time peeling the avocado because it's not ripe enough). You can prep everything like I've pictured it above and toss it in the blender. A quick snack any time.

Taco Shop Tomatillo Salsa
You Will Need:
1 lb tomatillos, husked, washed, and quartered
1/2 c cilantro
4 cloves garlic, peeled
1/2 c white onion, peeled and quartered
3 serrano chiles
2 limes, juiced and zested
Kosher salt to taste
1 medium avocado, ripe*
In a blender, pulse tomatillos, cilantro, garlic, onion, chiles, lime juice and zest, and salt until smooth. Add the avocado flesh and blend until smooth. Add more lime juice, peppers, and salt to taste.
*I recommend using ripe avocados simply because they blend better, and they shed their skin faster than a bride sheds her clothes on her honeymoon. You can literally peel them with a spoon.
