Sweet as Candy
While I'm struggling to embrace the paleo lifestyle with the same love and affection that I give my family (i.e. the cautious embrace of siblings trying to figure out who snitched on whom), breakfast is truly a struggle. I can only eat eggs so much and being between the rent paycheck and the good paycheck means I can't afford some of the more luxurious paleo recipes like muffins made from almond flour or pumpkin porridge (although I'm definitely intrigued by both prospects). So, I'm getting into smoothies like every other day. It's actually pretty awesome that there are so many blogs, videos, and recipe books devoted to smoothies. It means I don't have to try the same thing twice, and I can never get stuck for ideas.
This week's smoothie came about when I wanted to have some Lucky Charms mixed with Trix for breakfast and remembered my pledge to stay away from all of that. (Nevermind, that I totally blew it afterwards because I stopped by the gas station and picked up a soda on the way to work. Baby steps people!)
White Chocolate Tart Smoothie
You Will Need:
1 grapefruit, juiced and zested
1/2 c almond milk
1 c ice
1 c mixed berries, frozen or fresh
1 banana
1/4 c white chocolate chips*
2 tbsp honey
Put everything in the blender and pulse until smooth.
*If you're going die hard paleo, omit the white chocolate or substitute for dark chocolate. At this point in my life, I want a little decadence once in a while, so I'll happily sip my white chocolate smoothie from my red wine glass like a boss.
