Day 6: Bright
Christmas decorating is fun. I love tacky-ing up the house by draping everything I can in lights and wreaths and ribbons. So far the tree is up, and I'm slowly adding more decorations to the house. While I was struggling with a ball of lights that as far as I know are still tangling themselves up as we speak, I felt a huge craving for lemon. I'm sure it's no secret by now that I'm the world's biggest lemon fan. If my palate could handle it, I'd eat a whole lemon every morning just to perk me up. Lucky for me some beautiful soul invented lemon curd that beautiful custard that's used in donuts, pies, and this fantastic recipe for lemon bars.
The beautiful thing about this recipe is that you get three recipes for the price of one. There's a great shortbread recipe that is phenomenal on it's own. A lemon curd that goes great with crepes or spread on toast. And, the pièce de résistance, these tasty lemon bars that I can demolish a whole pan of on my own if left to my own devices. (Kenny has turned the cats into guard dogs on more than one occasion.) It certainly brightens my day.
