Sweet Springtime Slaw
I love spring weather in Vegas. In my neck of the woods at the edge of town, it's warm enough to wear shorts and enjoy a sunny day but cool enough that I'm not broiling while I fire up the grill. Not to mention the fantastic selection of vegetables that my local farmer's market and my Bountiful Basket have to offer when the weather takes a turn for the better. I know for most places summer is grilling season, but if you've ever spent the summer in the desert, then you know triple digit heat isn't the best time to be minding a grill. So with the weather being sunny and in the 70's, I felt it was time to bust out that charcoal and get a fire roaring.
I honestly feel like there's no need to get fancy when you're just throwing a few burgers (Kenny's go to comfort food) on the grill. I know a lot of people feel like they have to go all out ala Bobby Flay style, but really it causes more stress than you need. Some of the best foods are come from the simplest recipes that bring together your favorites foods. I love this really simple broccoli salad. Don't let the ingredients list fool you. It mixes together in a snap and the hardest part is waiting for the salad to chill so you can eat it.
